Slow Cooker Chicken Tortilla Soup
Ingredients

2 lbs boneless, skinless chicken breasts

4 cups chicken broth

1 can (15 oz) diced tomatoes

1 can (10 oz) Rotel tomatoes with green chiles

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 small onion, diced

3 cloves garlic, minced

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste
Directions

Add all ingredients to the slow cooker and stir to combine.

Cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the chicken is tender and cooked through.

Remove the chicken, shred with two forks, and return it to the slow cooker. Stir well before serving.
